Pistachio Pudding Cookies 1 C butter 1 C sugar 2 eggs 1 (4 servings) box Instant Pistachio Pudding 1/2 t salt 1 t baking soda 2 C flour 1/2-3/4 C chopped pistachio nuts 1 C white chocolate chips heat oven to 350°. beat butter and sugar together until light and fluffy.Add eggs.Add pudding.Add salt and baking soda and mix, followed by flour.Stir in nuts and chocolate chips.Drop by heaping tablespoon on lined baking sheet. Bake for 9-10 min.
